Here is the recipe that I use for Mo-mos, a Tibetan dumpling dish.
Ingredients:
3 cups of flour
2 onions
2" ginger
2-3 cloves of garlic
Cilantro
1 lbs of cabbage
2 tbsp of soy sauce
1 tsp of buillion

Either 1lbs of ground meat or 1/4 lbs of dark brown mushroom.

Wrappers:
Mix flour and 3/4 c of water by hand. Mix to a smooth ball, keep in a covered container such that it doesn't dry out further.

Filling: Chop all other ingredients very finely. Mix all ingredients thoroughly.
Shaping: Roll dough out into circles about the size of the palm of your hand and 1/4" thick.
Packing: Put 1 tbsp of filling into the wrapper. Fold over into a semi circle shape, then pinch the edge shut very tightly. This seal is key.
Cooking: Steam for 10 minutes.
Eating: Put Mo Mo in mouth and enjoy. Thai Sweet Chili sauce goes fantastically with them.
