Recently I've been putting cashew nuts in EVERYTHING. They're delicious and go with loads of things. They're particularly nice in curry, ratatouille or any vegetabley mixture.

Just thought I would share the joy as I have just enjoyed a nice meal with cashew nuts in it.

They make a wonderful yummy nut roast.

For local produce reasons I guess, they end up in 'Fruit & Nut' chocolate bars in India - delishhh.

I'll just award myself a couple of demerits for craving them.  Smiley

Funny story:

We have a vegan recipe for black bean enchiladas and instead of the cheese they use a sauce made of raw cashews.  So, since it was Hubby's turn to cook, I was reading the instructions and instead of hearing "raw cashews" he heard "raw cat food".

You can imagine the confused look on his face....

hahhahhahaahahaha!

100 grams of dry roasted cashews has 46 grams of fat, 388 calories of the 574.

Can be high in cholesterol I think, if one eats too many.

But I eat alot too!

Both are concerns in some diets. One poster thought cashews high in cholesterol, but they are not. They do have a fair amount of fat and calories from fat. I enjoy cashews in all forms, but am aware of their dietary impact. If that isn't a concern for you, great, enjoy as often as possible!!

So - I have a lot of shelled walnuts here at the casa. They were cheap, so I bought them.

Other than being a bland snack or snazzy decor on a cake, what does one do with a bunch of walnuts?

You can bake with them or add them to stir-fry.  You can also grind them up and use them to thicken sauces and stuff.
